I'm not sure if I've ever posted about this or not, but my friend Misty and I do this thing called OAMC. What is that, you ask? A quick Google search gave me this handy definition:
What is OAMC or Once A Month Cooking? It is a method of producing several entrees or meals in a one or two day-long cooking session. Meals and entrees are prepared for the next 30 days, then frozen. This makes cooking and clean-up minimal for the remainder of the month, giving you more time with your family, and to pursue personal interests.
It saves you time... and couldn't we all utilize that better? And an added bonus - it also saves you money. We decided to partner up and swap meals. 30 meals seemed to be a bit daunting, so we decided to try 20. I cook 10 different recipes x 2 and she cooks 10 different recipes x 2. That means that after we swap, we each have 20 different meals in the freezer ready to go at a moment's notice!
Back to today -
Today was cooking day. But before you cook, you have to SHOP! Off to Sam's and Kroger I go. I get home and get started around 2PM and decide for my sanity, that I am going to have to split my meal prep into 2 different days. Today was BEEF day... and in a couple of days, it will be CHICKEN day. Here's what I made:
Baked Spaghetti x 4 (made with the best homemade sauce - yum!)
Cheesy BBQ Sloppy Joes x 2
Hamburger Goulash x 2
Deep Dish Pizza Casserole x 2
I also had some sauce left over to freeze for future spaghetti nights
I would say that I worked from 2:30 - 9:30, but not straight through. I took a break to rest my feet at about 4:30... and woke up on the couch about 5:30!! We also took a break to eat supper (that I did not prepare - ha). Probably altogether, I spent about 5 hours actively prepping/cooking/washing dishes. I do have this massive spaghetti sauce recipe that takes FOREVER, so that accounts for some of that time as well.
My chicken recipes for this time will include:
Spicy White Lasagna (from Paula Deen magazine)
Pancetta Wrapped Boursin Stuffed Chicken Breasts (sounds yummy!)
Cheesy Chicken Shells
Saucy Parmesan Chicken
Spinach Cream Cheese Stuffed Chicken

So, my family is REALLY tired of me just throwing together something to eat... PLEASE let me be a part of this thing. How can we make this happen. Do we need to have an even number of participants? Let me know.
